For the Beef
1. Add steak and sear each side 3-4 minutes until a brown crust has formed then use tongs to turn steaks on their sides and sear edges.
2. Sprinkle both sides liberally with salt and pepper.
3. Remove steak and rest 10 minute before slicing into 1/2" strips to serve.
Sauce
1. Sauté tomato, Bell pepper, garlic, galangal, rosemary with beef fat and butter seasoning with a pint of salt.
2. Remove rosemary and galangal then blend everything in the blender.
3. Sauté sweet corn and potato to serve on side, garnish with rosemary.
