Made with tender minced lamb, crisp lettuce, tangy pickles, and a touch of béarnaise sauce, this recipe delivers bold flavour with every bite. Ingredients

  • 150g minced lamb
  • 1 brioche burger bun, toasted
  • 2 tsp bearnaise sauce
  • 1/2 shallot, diced
  • 1/4 iceberg lettuce, shredded
  • 1-2 pickles, sliced
  • Ketchup
  • American mustard
  • Generous pinch of salt
  • Extra virgin olive oil

Method

  1. Lightly toast the buns.

  2. Prepare the toppings by shredding the lettuce, dicing the shallots, and slicing the pickles.

  3. Heat a large heavy pan over high heat for a few minutes.

  4. Roll the lamb mince into a loose ball (do not pack tightly).

  5. Add a little oil to the hot pan. Place the lamb ball in the centre.

  6. Press down with a spatula or burger press until about 1 cm thick.

  7. Cook for 2 minutes without moving.

  8. Sprinkle salt on top and drizzle a little oil.

  9. Flip with a stiff spatula. Cook for another 2 minutes.

  10. Sprinkle with more salt.

  11. Remove from the pan.

  12. Assemble the burger with the toppings and sauce of choice.
