Lightly toast the buns.
Prepare the toppings by shredding the lettuce, dicing the shallots, and slicing the pickles.
Heat a large heavy pan over high heat for a few minutes.
Roll the lamb mince into a loose ball (do not pack tightly).
Add a little oil to the hot pan. Place the lamb ball in the centre.
Press down with a spatula or burger press until about 1 cm thick.
Cook for 2 minutes without moving.
Sprinkle salt on top and drizzle a little oil.
Flip with a stiff spatula. Cook for another 2 minutes.
Sprinkle with more salt.
Remove from the pan.
Assemble the burger with the toppings and sauce of choice.
